    This certainly sounds like a delicious combination of ingredients but is far too high in carbohydrates for me. I am sure it would send my blood sugar sky high.

    Hi Pat,

    I can definitely vouch for how delicious this recipe is! The carb count is 37 grams for one serving, however, most of that comes from the black beans, which are complex, slow-release carbs. Meaning, they are slowly digested by the body and do not result in a rapid boost of blood sugar levels like simple carbs.

    Hi! Thanks for the recipe – I always appreciate new ones. I’m not a big fan of mango, though. Is there another fruit that would work just as well?

    That’s a great question! Papaya would be a great alternative and even melons like cantaloupe or honeydew.

    This recipe was delicious! Next time I will try with peaches or papyja . Otherwise I wouldn’t change a thing. I’m so happy to know that it is also good for my bones!

    This sounds like a perfect and easy recipe to do for a group at the beach. We are going soon and this would be good as a dip with tortillia chips.

    Hi Sandra,

    I think that would work! After thawing frozen mangoes they might have some excess moisture — you could gently squeeze the mangoes with a towel to remove this.
